Ingredients:

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 4 cloves of garlic, minced
  • 2 teaspoons of paprika
  • 1 teaspoon of cumin
  • 1/2 teaspoon of cayenne pepper (optional)
  • 1 can of diced tomatoes
  • Salt and pepper
  • 4 large eggs
  • Fresh parsley or cilantro (optional)

Instructions:

  1. In a large pan, heat the olive oil over medium heat. Add the onion and bell peppers and cook until softened, about 5-7 minutes.
  2. Add the garlic, paprika, cumin, and cayenne pepper (if using) and cook for another minute.
  3. Pour in the diced tomatoes and season with salt and pepper. Let the mixture simmer for 10-15 minutes.
  4. Using the back of a spoon, make 4 wells in the tomato mixture.
  5. Crack an egg into each well.
  6. Cover the pan and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
  7. Serve hot, garnished with fresh parsley or cilantro, if desired.
