Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup all-purpose flour
- 4 eggs
- 2 cups panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Save some for garnish
- 2 cups marinara sauce
- 1/2 cup grated mozzarella cheese
- Olive oil, for frying
Instructions:
- Preheat your oven to 375°F.
- First things first, let's get our chicken breasts ready. Take a meat mallet and pound them until they're about 1/2 inch thick. Season both sides with salt and pepper.
- Set up your breading station. In one shallow dish, add the flour. In another shallow dish, beat the eggs. In a third shallow dish, mix together the panko breadcrumbs, grated Parmesan cheese, and chopped fresh parsley.
- Take each chicken breast and coat it in the flour, shaking off any excess. Then dip it in the beaten eggs, and finally coat it in the breadcrumb mixture, pressing the breadcrumbs into the chicken to ensure they stick.
- Heat a large frying pan over medium-high heat and add enough olive oil to cover the bottom of the pan. Once the oil is hot, add the chicken breasts and cook for 3-4 minutes on each side, until golden brown and crispy. Don't overcrowd the pan - you may need to cook the chicken in batches.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the chicken breasts on top of the sauce, then spoon the remaining sauce over the top of each breast. Sprinkle the grated mozzarella cheese over the top of the chicken.
- Bake the Chicken Parmesan in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly and the chicken is cooked through.
- Serve the Chicken Parmesan hot, garnished with fresh parsley leaves.
