BBQ Pulled Pork Sandwich
Ingredients:
- 2 lbs pork shoulder or pork butt
- 1 cup barbecue sauce
- 1/4 cup apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 6 brioche buns
- Coleslaw, for serving
Instructions:
- Preheat your oven to 325°F.
- Season the pork shoulder or pork butt generously with salt and pepper.
- Heat a large Dutch oven or oven-safe pot on medium-high heat. Add in a tablespoon of vegetable oil and sear the pork on all sides until it's browned.
- In a small bowl, mix together the barbecue sauce, apple cider vinegar, Dijon mustard, brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Pour the barbecue sauce mixture over the pork and cover the pot with a lid.
- Place the pot in the oven and roast for 3-4 hours, or until the pork is tender and falls apart easily with a fork.
- Remove the pot from the oven and use two forks to shred the pork in the pot.
- Toast the brioche buns and assemble the sandwiches with the pulled pork and coleslaw.
