Baked Potatoes with Broccoli and Cheddar
Ingredients:
- 4 large russet potatoes
- 2 cups of broccoli florets
- 2 cups of shredded sharp cheddar cheese
- 1/2 cup of sour cream
- 1/4 cup of chopped fresh chives
- 4 tablespoons of butter
- Salt and black pepper, to taste
- Olive oil, for drizzling
- Cooking spray
Instructions:
- Preheat oven to 400°F (200°C).
- Scrub and prick potatoes, then place on a foil-lined, lightly greased baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 45-60 minutes until tender.
- Steam broccoli until tender-crisp, about 3-4 minutes, and set aside.
- Slice off the top third of each potato, scoop out most of the flesh into a bowl, leaving a thin layer against the skin to create shells.
- Mash the potato flesh with butter, sour cream, and half the cheddar cheese. Season with salt and pepper.
- Gently fold in the steamed broccoli.
- Fill potato shells with the mixture, top with remaining cheddar cheese, and bake for 10-15 minutes until cheese is bubbly. Garnish with fresh chives before serving.
